From what I read in the comparative specs, the Nuvi 3xxx series share 800x480 resolution and use the capacitive discharge screen, allowing pinch zoom. We are a rural community with little traffic updates available, so it is likely any "T" capability would be only used a couple times per year, if that, in Portland or Seattle, for example. My guess is that the LM model would be sufficient for all but the larger cities that have traffic alerts, so I should be comparing 3xxxLM models, not 3xxxLMT models. Correct?

LM does not have traffic. If you do not need traffic then yes you should be comparing the LM models.

Is it true that only the 34xx series have the capacitive discharge screen, allowing pinch zoom? This seems like a nice feature, but the + - icons on a touch screen are probably equally effective. Is it only the 34xx models that allow the paging with two fingers, like an android phone?

Yes only unit with a capacitive screen at this time can do pinch zooming. The other one that can do it is the older nuvi 37XX series. You can page using one finger and dragging it on the screen. Or flick you finger. You can change pages in search menus on other models also like that. Such as the nuvi 25XX series.
