What if I bought a device in Canada or the US. then I traveled to Asia, could I use the device (load relevant maps etc.) in Southeast Asia - Singapore for example?

Yes, there are additional maps that can be added for other countries. For Singapore you would require http://www.gpscity.com/garmin-microsd-city-navigator-southeast-asia-nt-with-adapter.html

If I was to buy and use the 3590 LMT first in Quebec, then in Japan, then in New Zealand and then in Poland would this GPS require taking NA and Mexico map software (and subsquently loaded map software) off to load up the additional GPS road maps? Is there any better GPS that would simultaneously accommodate GPS road maps for driving in different continents and countries?

No matter where you go and what maps you need, you cannot remove the maps off the GPS that came with it from the factory. Doing so would render the GPS inoperable.

Wherever you go, you can add microSD maps to the unit so you can get detailed mapping in that country. Unfortunately Garmin does not have any Japan maps for sale outside of Japan, so those need to be sourced when you get there, but you can buy New Zealand and Europe separately. Please see here:
