Does this include all items needed to install on a sport bike? Will this fit on a 06 gsxr1000?

This assembly is complete and as it is adjustable, should fit your specific bike.

Can I swap the short stem for the long one?

We don't have a bundle including a long arm, but you can buy the pieces individually with a longer arm.
