Can we switch the short arm (3.19" socket-2-socket) included in the RAM-D-111U-C kit with RAM-D-201U (6.56" socket-2-socket) to get a package price?

You should take a look at this part instead, it includes the longer arm, RAM-D-111U-E.

Thanks, but I'd really need the in-between solution (it's for a Lowrance HDS-5, that I may upgrade to a HDS-8 in the mid-term future...) and to put on the boat console (Lund ProSport 1700) so that is why the longer arm (11 inches) would be too long, the 6 in would be great, so I can reverse the display to see it from the front of the boat when fishing ... so , I guess the only choice I have is to buy all the components separately.

We will not be able to do a switch but there is an option with your arm available.
