When setting Garmin Dakota in Automotive mode, and programming any destination, I get fault banner, "Route calculation error, Maps do not have routable roads in this area." When driving, I do see the roads and my car icon moving on the roads, correct speed, etc, so there surely are roads for this area. I have all pre-installed maps enabled, and the Garmin 100k topo (that I purchased as a part of the bundle) enabled.

You will need city navigation maps or the 24K topo for proper road routing. The 100k maps do not do autorouting down roads and trails like other software.

The 100k only does point to point routing or some know it as the way a birds flies (straight lines).

I have a new gpsmap62sc and when I try to geocache in mountaineer mode it indicates route calculation error maps not routable roads in this area. I'm not trying to go on the road I'm following coordinates. Please don't tell me I need to buy maps.

You can try to change you routing settings. Right now it is probably set to follow roads. You can change it to off road or prompted. Prompted will ask you what method you want instead of defaulting to one of the others.

The above video is for a different unit, the Garmin Dakota will have a similar menu.

Get the same error with the Oregon 450 I just got. Got all the setup fine but can't seem to get the map(s)

How did you install the maps and which maps are you using?
