I am considering the purchase of the inland lakes microSD for my Garmin 60CSx. I want to use the "depth" data field on my display for the approx depth at my location on the lake. Is this data available or do I need to look at the "layers" to understand the depth?

You will need to read the depth information from the map screen. The depth data field is for when you hook the unit up to a compatible NMEA 0183 depth transducer.

The inland lake maps will show depth contour lines.
