Do you have a temperature transducer for the unit? If not you will need an external temperature sensor or transducer/temperature sensor combo. Here is the PN of one suitable transom mount Temp/depth transducer. XHS 9 HDSI 180 T

I don't have a unit handy to walk you through the setup at this time so I will have to refer you to the manual. If you have a temperature sensor already please try the following.
If you check page 128 they explain how to display the temperature on the screens of the Humminbird 998C series. You may want to start from the front of that chapter to make sure you navigate into the correct menus.
