Can I put in the route I want to follow or am I required to follow the route provided by the Garmin when a destination is inputted?

This unit unfortunately does not accept user created routes. You will need to look at a different unit if you need route capability. I would look at the Nuvi 1450 series if you need this capability. There are quite a few units that offer this, including the Nuvi 14xx, Nuvi 5xx, and 37xx.
